Okanagan Peach Ginger Compote

It has become an annual tradition for Sara and me to visit sister Jenny and her husband Marc in Kelowna, nestled in the beautiful Okanagan Valley of British Columbia. Over the years, the region has become one of North America’s premier destinations for orchard fruits, world-class wines, regenerative agriculture, and organic farming. It is truly a food lover’s paradise.

The Kelowna Farmers’ and Crafters’ Market, held twice each week, is one of our favorite stops. Every visit reveals a new culinary treasure. This year it was fresh sumac flower clusters, which can be dried and ground into the cherished Middle Eastern spice sumac or blended into za’atar. They can also be steeped to make a refreshing lemonade-like beverage enjoyed throughout parts of the Mediterranean and Middle East.

Nothing captures the essence of late summer quite like ripe Okanagan Valley freestone peaches. There is good reason that one of the communities bordering Okanagan Lake is called Peachland. The warm days, cool evenings, and mineral-rich glacial soils produce peaches with extraordinary sweetness, aroma, and vibrant flavor.

Of course, we purchased far more peaches than we could possibly eat fresh, so the decision was made to transform them into something special. Since I was already preparing my Cashew Cardamom Cake, a roasted peach compote seemed like the perfect companion. Roasting intensifies the peaches’ natural sweetness while fresh ginger contributes a bright warmth and pure maple syrup adds a subtle richness. The result is a versatile compote that’s equally at home on pancakes, waffles, oatmeal, toast (as shown), vegan yogurt, cheesecake, ice cream, or simply enjoyed by the spoonful.

The Health Benefits of Peaches and Fresh Ginger

Beyond their wonderful flavor, peaches are an excellent source of vitamin C, which supports healthy skin and immune function. They also provide vitamin A precursors, potassium, and an array of antioxidant polyphenols that help protect our cells from oxidative stress. Their high water content and natural fiber make them a refreshing fruit that supports hydration and digestive health.


Fresh ginger has been treasured for thousands of years in Ayurvedic and traditional Chinese medicine. Its natural compounds, particularly gingerols and shogaols, are known for their anti-inflammatory and antioxidant properties. Ginger is perhaps best known for supporting healthy digestion, helping relieve nausea, and promoting circulation. Combined with the antioxidant compounds found in peaches, this simple compote becomes more than just a delicious dessert—it is a celebration of two ingredients long appreciated for both their flavor and their contribution to health and vitality.

Roasted Peach Ginger Compote

Recipe by Chef George Vutetakis

Make 4 cups

Ingredients

6 ripe freestone peaches, halved (leave skins on)

½ cup pure maple syrup

½ tablespoon fresh ginger, finely minced

¼ cup organic cane sugar

Instructions

Preheat the oven to 425°F (220°C).

Line a baking sheet with parchment paper.

Arrange the peach halves cut-side down on the prepared baking sheet.

Combine the maple syrup, minced ginger, and sugar in a small bowl and spoon evenly over and around the peaches.

Roast for 35 minutes, or until the peaches are very tender and lightly caramelized.

Remove from the oven and allow the peaches to cool until they are comfortable to handle.

Transfer the peaches and all of the caramelized juices to a food processor and purée until smooth, or leave slightly textured if preferred.

Refrigerate until chilled. The compote will keep in an airtight container for up to one week.

Chef’s Notes

Leaving the skins on during roasting deepens the peach flavor and adds beautiful color to the finished compote.

For an optional smoother consistency, pass the purée through a fine-mesh sieve after processing.
